Preparation Steps
Prepare the Oysters
Start by placing the Kumamoto oysters on a clean surface. Use a shucking knife to carefully open each oyster, discarding the top shell and keeping the oyster and its liquid in the bottom shell.
Season the Oysters
Squeeze fresh lemon juice over each opened oyster. Sprinkle a pinch of sea salt and freshly ground black pepper on top for added flavor.
Prepare the Honeydew
Cut the honeydew melon in half, remove the seeds, and scoop out the flesh. Chop the flesh into small cubes and set aside.
Chop the Chives
Finely chop the chives and sprinkle them over the oysters for a fresh herbal note.
Serve
Arrange the prepared oysters on a serving platter. Top each oyster with the chopped chives and serve with the honeydew cubes on the side for a sweet finish.
