Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Oysters

    Carefully shuck the fresh oysters and place them on a baking sheet. Discard the top shell and keep the bottom shell with the oyster inside.

    Sauté the Aromatics

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and minced garlic, and sauté until they are translucent, about 2-3 minutes.

    Cook the Spinach

    Add the chopped spinach to the skillet and cook for about 3-4 minutes until wilted. Remove from heat.

    Combine the Ingredients

    In a mixing bowl, combine the sautéed spinach mixture with grated Parmesan cheese, crumbled bacon, and half of the buttered bread crumbs. Mix well.

    Fill the Oysters

    Spoon the mixture generously over each shucked oyster in the shell.

    Top with Bread Crumbs

    Sprinkle the remaining buttered bread crumbs evenly over the filled oysters.

Baking

    Bake the Oysters

    Place the baking sheet with the prepared oysters in the preheated oven. Bake for about 10-12 minutes, or until the topping is golden and bubbling.

    Serve

    Remove from the oven and let cool slightly before serving. Serve hot, garnished with lemon wedges if desired.
