Prepare the Mussels
Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt or sand. Discard any mussels that are broken or do not close when tapped.

Prepare Aromatics
Chop the lemongrass into 1-inch pieces and bruise them with the back of a knife. Grate the ginger and finely chop the serrano pepper (adjust the amount based on your spice preference).

Cook the Ingredients
In a large pot over medium heat, add the bruised lemongrass, ginger, and serrano pepper. Sauté for about 2-3 minutes until fragrant.

Add Coconut Milk
Pour in the can of coconut milk and stir well. Allow the mixture to come to a gentle simmer.

Cook the Mussels
Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes, or until all mussels have opened. Discard any mussels that remain closed.
