    Cook the Pasta

    Boil a large pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Lobster

    If not pre-cooked, boil the lobster meat in salted water for about 5-7 minutes until fully cooked. Remove from water, cool slightly, and chop into bite-sized pieces.

    Make the Cheese Sauce

    In a saucepan, melt 4 tablespoons of butter over medium heat. Add the sliced shallots and sauté until soft, about 3-4 minutes. Stir in the heavy cream and bring to a simmer.

    Add Cheeses and Brandy

    Once the cream is simmering, reduce heat to low and add the gouda and white cheddar cheese. Stir until melted and smooth. Add the brandy, lime juice, cilantro, and mint. Mix well.

    Combine Pasta and Sauce

    Add the drained macaroni to the cheese sauce and mix until fully coated. Gently fold in the lobster meat.

    Prepare Brown Butter Bread Crumbs

    In a small skillet, melt 1 tablespoon of butter over medium heat. Add the bread crumbs and toast until golden brown, stirring frequently. Remove from heat.

    Assemble the Dish

    Preheat the oven to 350°F (175°C). Transfer the lobster mac and cheese mixture into a baking dish. Top with toasted bread crumbs and sprinkle with chopped chives.

    Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.

    Remove from the oven and let it cool slightly before serving. Garnish with additional chives and enjoy!
