Brining Process

Prepare the Brine
In a large pot, combine 4 cups of water, 1 cup of kosher salt, and 0.5 cups of brown sugar. Stir until the salt and sugar have completely dissolved.

Add Aromatics
Add 1 tablespoon of black peppercorns, 3 bay leaves, and 4 crushed garlic cloves to the pot. Toss in 2 sprigs of fresh rosemary and 2 sprigs of fresh thyme.

Bring to a Boil
Heat the mixture over medium-high heat until it comes to a boil. Once boiling, remove from heat and allow it to cool to room temperature.

Chill the Brine
Once cooled, refrigerate the brine for at least 2 hours to ensure it is thoroughly chilled before using.

Brine the Meat
Submerge your choice of meat (such as chicken, pork, or turkey) in the chilled brine. Make sure the meat is fully covered. Allow it to brine for at least 6 hours, or overnight for best results.
