Preparation of Ingredients

  1. 1

    Clean the Clams

Rinse the clams under cold running water to remove any sand or debris. Set aside.

  2. 2

    Prepare the Vegetables

Dice the red bell pepper, shallots, and garlic finely. Set aside.

  3. 3

    Cook the Bacon

In a skillet over medium heat, cook the smoked bacon until crispy. Remove from the pan, crumble, and set aside.

  4. 4

    Prepare the Shrimp (if using)

If using shrimp, peel and devein them, then chop into small pieces.

Cooking the Clams

  1. 5

    Sauté the Vegetables

In the same skillet with the bacon grease, sauté the diced red bell pepper, shallots, and garlic for about 5 minutes until soft and fragrant.

  2. 6

    Mix the Filling

In a bowl, combine the sautéed vegetables, crumbled bacon, and chopped shrimp (if using). Mix well to combine.

  3. 7

    Fill the Clams

Preheat the oven to 375°F (190°C). Place the cleaned clams on a baking sheet and spoon the vegetable and bacon mixture on top of each clam.

  4. 8

    Bake the Clams

Bake the clams in the preheated oven for about 10-12 minutes, or until the clams are cooked and the topping is golden brown.

Serving

  1. 9

    Prepare the Plate

Serve the baked clams on a platter with a side of Creole slaw, pickled red onions, and tartar sauce.

  2. 10

    Add the Roll

Serve with soft rolls on the side for dipping into the clams' juices.

  3. 11

    Final Touch

Select your choice of side and serve alongside the clams for a complete meal.
