Brewing Instructions

  1. 1

    Mashing the Grains

In a large mash tun, combine the pale malt, wheat malt, and flaked oats with 5 gallons of water. Heat the mixture to 152°F (67°C) and maintain this temperature for 60 minutes. Stir occasionally to ensure even heating.

  2. 2

    Sparging

After mashing, sparge the grains with hot water (170°F or 77°C) until you collect around 6-7 gallons of wort in your brew kettle.

  3. 3

    Boiling the Wort

Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. This will help to extract the hops' bitterness and aroma.

  4. 4

    Adding Flavoring

During the last 15 minutes of the boil, add the crushed coriander seeds and Curacao orange peel to the wort for flavor.

  5. 5

    Cooling the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).

  6. 6

    Fermentation

Transfer the cooled wort to a sanitized fermenter. Pitch the Belgian Witbier yeast and seal the fermenter with an airlock. Allow fermentation to occur at room temperature for 1-2 weeks.

  7. 7

    Bottling

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Allow the bottles to condition for an additional 1-2 weeks at room temperature.

  8. 8

    Enjoying

Chill the bottles in the refrigerator for a few hours before enjoying your homemade Allagash White!
