    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Slice the onion thinly and add to the skillet. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

    Prepare the Bison Patty

    In a bowl, combine ground bison meat, salt, and black pepper. Mix gently and form into 2 patties.

    Cook the Bison Patty

    Heat a grill or skillet over medium-high heat. Cook the bison patties for about 4-5 minutes on each side or until they reach your desired doneness. In the last minute of cooking, place a slice of smoked Gouda on each patty to melt.

    Assemble the Burger

    Toast the burger buns on the grill or in a toaster. Place the cooked bison patty with melted Gouda on the bottom half of the bun. Top with caramelized onions and a drizzle of wild sauce. Add the top half of the bun and serve.
