Muffin Preparation

Prepare the Muffin Batter

Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.

Bake the Muffins

Grease a mini muffin tin and fill each cup with the batter. Bake for 12-15 minutes or until a toothpick comes out clean. Allow to cool.

Prepare the Yogurt Toppings

In a small bowl, mix the Greek yogurt with cinnamon and honey. Set aside. Alternatively, you can use vanilla yogurt.

Boil the Egg

Place an egg in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 10-12 minutes. Transfer to cold water, peel, and slice.

Assemble the Bento Box

In a bento box or container, place a few mini muffins, a serving of yogurt (Greek or vanilla), berries, chopped nuts, and the hard-boiled egg. Enjoy your healthy breakfast!
