Method

Muffins

1

Prepare the Muffin Batter

In a large bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together milk, oil, and eggs. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in blueberries if using.

2

Bake the Muffins

Preheat the oven to 375°F (190°C). Grease a muffin tin and fill each cup about 2/3 full with batter. Bake for 20-25 minutes or until a toothpick comes out clean.

Rolls

3

Prepare the Dough

In a bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes. In a large bowl, combine flour and salt. Add the yeast mixture, melted butter, and milk. Knead until smooth.

4

Let the Dough Rise

Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.

5

Shape and Bake the Rolls

Preheat the oven to 375°F (190°C). Punch down the dough, shape into rolls, and place on a baking sheet. Bake for 15-20 minutes until golden brown.

Croissants

6

Prepare the Dough

In a bowl, dissolve yeast and sugar in warm milk. In a large bowl, combine flour and salt. Add the yeast mixture and mix until a dough forms. Knead for 5 minutes.

7

Laminate the Dough

Roll out the dough into a rectangle, place cold butter between layers, and fold. Repeat rolling and folding three times.

8

Cut and Shape Croissants

Roll the dough into triangles and roll them up from the base to the tip. Place on a baking sheet.

9

Let Rise and Bake

Preheat the oven to 400°F (200°C). Let the croissants rise for 1 hour, then brush with egg wash. Bake for 15-20 minutes until golden.
