Preparation Steps

    Prepare the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until softened.

    Add Remaining Vegetables

    Add mushrooms, broccoli, cauliflower, and spinach to the skillet. Cook for another 5-7 minutes, stirring occasionally, until vegetables are tender.

    Prepare the Hash Browns

    In a separate pan, cook the hash browns according to package instructions until crispy. Set aside.

    Whisk the Eggs

    In a bowl, whisk the eggs with salt and black pepper until well combined.

    Add Eggs to Vegetables

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook on low heat until the eggs are set, about 5-7 minutes.

    Add Cheese

    Sprinkle shredded white cheddar cheese on top of the omelet and cover the skillet for 2-3 minutes to melt the cheese.

    Once the cheese is melted and the eggs are fully cooked, slide the omelet onto a plate, serve with crispy hash browns on the side, and top with salsa verde.
