    Prepare the Vegetables

    Dice the onion, bell peppers, and shred the carrots. Set aside.

    Cook the Impossible Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Impossible sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion, bell peppers, and shredded carrots. Sauté until softened, about 5 minutes.

    Add Hash Browns

    Stir in the hash browns to the skillet and cook until crispy, about 8-10 minutes, stirring occasionally.

    Add Vegan Eggs

    Pour in the vegan eggs and cook until they are set and cooked through, about 3-5 minutes.

    Combine Ingredients

    Return the cooked Impossible sausage to the skillet. Add diced tomatoes, salt, and black pepper to taste. Mix everything well and cook for an additional 2-3 minutes.

    Top the hash with shredded vegan cheese and pico de gallo. Serve hot with tortilla chips on the side.
