Cream of Chicken Wild Rice

Method

Cream of Chicken Wild Rice

    Prepare the Chicken

    Cook the chicken breast in boiling water until fully cooked, then shred it.

    Sauté Vegetables

    In a large pot, sauté the onions, carrots, and celery in olive oil until tender, about 5 minutes.

    Add Garlic and Rice

    Add minced garlic and wild rice to the pot and stir for 1 minute.

    Combine Broth and Cream

    Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes. Stir in heavy cream.

    Season

    Add shredded chicken, thyme, salt, and pepper. Simmer for an additional 5 minutes.

Chicken Pozole

    Sauté Aromatics

    In a large pot, sauté the chopped onion and minced garlic until translucent.

    Add Chicken and Broth

    Add shredded chicken and chicken broth, bringing to a boil.

    Add Hominy and Spices

    Stir in hominy, cumin, chili powder, salt, and pepper. Simmer for 15 minutes.

    Finish with Lime

    Remove from heat and stir in lime juice.

    Serve

    Garnish with chopped cilantro and serve hot.

Tomato Basil

    Sauté Onions

    In a pot, heat olive oil and sauté chopped onion until softened.

    Add Tomatoes and Garlic

    Add chopped tomatoes and minced garlic. Cook for about 10 minutes until tomatoes are soft.

    Add Broth and Simmer

    Pour in vegetable broth and bring to a simmer. Cook for 15 minutes.

    Blend Soup

    Using an immersion blender, blend the soup until smooth.

    Add Basil and Season

    Stir in fresh basil, sugar, salt, and pepper. Heat through before serving.
