    Prepare the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms. Season with salt and black pepper. Sauté until the vegetables are softened and slightly caramelized, about 8-10 minutes.

    Heat the Roast Beef

    Add the sliced roast beef to the skillet with the vegetables. Stir to combine and heat through for about 2-3 minutes.

    Toast the Bread

    While the beef and vegetables are heating, slice the French rolls lengthwise and toast them in an oven or toaster until they are golden brown.

    Assemble the Sandwiches

    Layer the roast beef and vegetable mixture onto the toasted French rolls. Place slices of provolone cheese on top of the warm filling.
