Prepare the Oven
Preheat your oven to 375°F (190°C).

Cook the Hash Browns
In a large skillet, cook the hash browns over medium heat until crispy and golden brown, about 10-15 minutes. Spread them evenly in a greased 9x13 inch baking dish.

Layer the Ingredients
In the same skillet, sauté the diced onion and sliced jalapeños until softened, about 5 minutes. Spread the carnitas over the hash browns, followed by the sautéed onion and jalapeños, black beans, diced tomatoes, and shredded cheese.

Bake the Hotdish
Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden.

Allow to cool slightly before slicing. Serve warm with tortilla chips and salsa on the side.
