Hot Vegan Sandwich

Preparation

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the spinach, broccoli, cauliflower, bell pepper, onion, tomato, and mushrooms to the skillet. Season with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

    Assemble the Sandwich

    On two slices of vegan bread, layer the sautéed vegetables evenly. Top with vegan cheese and sunflower seeds. Place the other two slices of bread on top.

    Toast the Sandwich

    Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and toast for about 3-4 minutes on each side until golden brown and the cheese is melted.

    Serve

    Cut the sandwiches in half and serve with chips on the side.
