Cook the Chicken Sausage
In a skillet, cook the sliced chicken sausage over medium heat until browned and heated through. Remove and set aside.

Cook the Hash Browns
Add the hash browns to the skillet and cook until crispy and golden brown, about 5-7 minutes.

Add Spinach
Add the spinach and cook until wilted, about 2 minutes.

Mix in Chicken Sausage
Return the cooked chicken sausage to the skillet and mix well with the other ingredients.

Prepare Béchamel Sauce
In a small saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour and cook for 1-2 minutes. Gradually whisk in 1 cup of milk and cook until thickened. Season with salt and pepper.

In a large bowl, beat 4 eggs, season with salt and pepper, then pour over the mixture in the skillet. Cook on low heat until the eggs are set.

Add Cheese and Sauce
Sprinkle mozzarella cheese over the top, then drizzle with béchamel sauce. Cover and let cook for another 2-3 minutes until the cheese melts.
