Preparing the Potatoes
Peel and cut the russet or sweet potatoes into thin strips, about 1/4 inch thick.

Soaking Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heating the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Frying the Potatoes
Carefully add the dried potatoes to the hot oil in small batches, frying for about 4-5 minutes until they are golden brown and crispy.

Draining and Seasoning
Remove the fries from the oil and drain on paper towels. Season with salt, paprika, and garlic powder to taste while still hot.

Serve immediately in a basket or on a plate.
