    Prepare the Fried Green Tomatoes

    Slice the green tomatoes into 1/2 inch thick slices. Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the tomato slices with salt and pepper, then fry them for about 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

    Cook the Veggie Sausage

    In the same skillet, add another tablespoon of olive oil. Cook the veggie sausage patties according to package instructions, usually about 4-5 minutes on each side until browned. Remove from the skillet and keep warm.

    Prepare the Hash Browns

    In the same skillet, add the hash browns and cook according to package instructions until crispy and golden brown, about 5-7 minutes. Season with salt and pepper to taste.

    Assemble the Foxy Benedict

    On a plate, layer the fried green tomato slices, spread 1 tablespoon of pesto on top of each slice, then place a veggie sausage patty on top. Finally, add the crispy hash browns on the side, garnish with fresh basil leaves, and serve warm.
