    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Sauté the Vegetables

    Chop the onion and tomatoes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the tomatoes and spinach, cooking until the spinach is wilted, about 2-3 minutes.

    Prepare the Omelet Mixture

    In a bowl, whisk together the egg whites, salt, and black pepper. Add the cooked quinoa, sautéed vegetables, and crumbled goat cheese to the mixture.

    Cook the Omelet

    In the same skillet, pour the omelet mixture and cook over medium-low heat. Cook until the edges are set and the bottom is lightly browned, about 5-7 minutes. Carefully fold the omelet in half and cook for an additional 2-3 minutes until fully cooked.

    Slide the omelet onto a plate, cut in half if desired, and serve warm.
