    Prepare the Sweet Tea

    In a large pot, bring 8 cups of water to a boil. Remove from heat and add 1 cup of sugar, stirring until dissolved. Add 4 tea bags and let steep for 15 minutes. Remove tea bags and allow the mixture to cool to room temperature.

    Combine Ingredients

    Once the sweet tea has cooled, pour it into a clean glass jar (at least 1-gallon capacity). Add 1 cup of starter tea and gently place the SCOBY on top.

    Fermentation

    Cover the jar with a clean cloth or coffee filter secured with a rubber band. Place it in a warm, dark place (around 70-85°F) for 7-14 days, depending on your taste preference. Check daily for flavor and carbonation.

    Flavor and Bottle

    Once the kombucha is to your liking, remove the SCOBY and set it aside. You can add flavorings at this stage by mixing in your choice of ginger, fruit, or herbs. Pour the kombucha into bottles, leaving some space at the top.

    Second Fermentation (Optional)

    Seal the bottles and let them sit at room temperature for 3-7 days to carbonate. After that, refrigerate to stop fermentation.

    Serve chilled. Be cautious of natural carbonation as it may fizz upon opening. Enjoy your homemade kombucha!
