    Make the Churro Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until fully combined. Let the mixture cool slightly, then stir in eggs one at a time until the dough is smooth.

    Prepare the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). You can test the oil temperature by dropping a small piece of dough into it; if it sizzles, it's ready.

    Pipe the Churros

    Transfer the churro dough to a piping bag fitted with a star tip. Carefully pipe strips of dough into the hot oil, cutting with scissors to release them. Fry in batches until golden brown, about 2-3 minutes per side.

    Coat the Churros

    Once fried, remove churros with a slotted spoon and drain on paper towels. While still warm, roll them in a mixture of sugar and cinnamon.

    Serve

    Serve the churros warm with Lupita's special chocolate sauce for dipping.
