Preparation Steps

  1. 1

    Prepare the Vegetables

Dice the red and green bell peppers, onion, tomatoes, and carrots.

  2. 2

    Cook the Hash Browns

In a large skillet, heat some oil over medium heat. Add the hash browns and cook until golden brown and crispy, about 7-10 minutes.

  3. 3

    Add the Vegetables

Stir in the diced peppers, onion, tomatoes, and carrots to the skillet with the hash browns. Cook for another 5-7 minutes until the vegetables are tender.

  4. 4

    Incorporate the Pulled Pork

Add the pulled pork to the skillet, stirring well to combine. Season with salt and black pepper. Cook for an additional 5 minutes until heated through.

  5. 5

    Melt the Cheese

Sprinkle the Chihuahua cheese over the top of the hash and cover the skillet to melt the cheese, about 3-4 minutes.

  6. 6

    Scramble the Eggs

In a separate bowl, beat the eggs with a pinch of salt. In another skillet, scramble the eggs over medium heat until cooked to your preference.

  7. 7

    Serve

Serve the carnitas hash hot, topped with scrambled eggs and accompanied by tortilla chips and apple pico.
