    Mixing the Dough

    In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until bubbly. Gradually add the flour and salt, mixing until a dough forms.

    Kneading

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled in size.

    Shaping Bagels

    Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center and stretch to form a bagel shape.

    Second Rise

    Place the shaped bagels on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

    Boiling

    Preheat the oven to 425°F (220°C). In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1 minute on each side, then remove and drain.

    Baking

    Place boiled bagels back on the baking sheet, brush with egg wash, and sprinkle with sesame or poppy seeds if desired. Bake for 20-25 minutes until golden brown.

    Remove from the oven and allow to cool on a wire rack before serving.
