Prepare the Almond Filling
In a mixing bowl, combine almond flour, powdered sugar, softened butter, vanilla extract, and salt. Mix until smooth and creamy.

Prepare the Dough
Roll out the pastry dough on a lightly floured surface. Cut the dough into triangles.

Fill the Croissants
Place a tablespoon of the almond filling at the wide end of each triangle. Roll the dough tightly, starting from the wide end, to form a croissant shape.

Prepare for Baking
Preheat your oven to 375°F (190°C). Place the filled croissants on a baking sheet lined with parchment paper.

Egg Wash
Beat the egg in a small bowl and brush it over the tops of the croissants. Sprinkle sliced almonds on top.

Bake
Bake in the preheated oven for 15-20 minutes, or until golden brown.

Let the almond croissants cool on a wire rack before serving.
