In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the pale malt and crystal malt, stirring well. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grain with 3 gallons of water heated to 170°F (77°C) to rinse the sugars from the grains.

Sparging

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add the Saaz hops for the last 10 minutes of the boil.

Boiling

After the boil, cool the wort quickly using a wort chiller or ice bath to around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal with an airlock and allow to ferment at around 68°F (20°C) for 1-2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add to the bottling bucket. Transfer the beer to the bottling bucket, mix gently, and bottle the beer.

Bottling

Allow the bottled beer to carbonate at room temperature for about 1-2 weeks before refrigerating.
