    Make quick pickled daikon ribbons

    In a small bowl, whisk rice vinegar, sugar, and salt until dissolved. Peel the daikon and shave into long, thin ribbons. Submerge ribbons in the brine and let sit for 15 minutes to lightly pickle and flavor. Drain and pat dry gently.

    Soften hoshigaki

    Place hoshigaki in a small bowl with warm water for 5–10 minutes to soften. Drain and pat dry. If they are very dry, gently pat to shape into a neat strip.

    Prepare hoshigaki strips

    Cut each softened hoshigaki piece into 2–3 long strips that will wrap neatly inside the daikon ribbon.

    Assemble rolls

    Lay a pickled daikon ribbon on a clean surface, place a strip of hoshigaki in the center, and roll the ribbon around it to form a tight cylinder. Secure with one toothpick if needed. Repeat with remaining ribbons.

    Arrange rolls on a serving plate. Lightly sprinkle toasted sesame seeds over the rolls. Chill for 10 minutes before serving.
