1. Prepare the turnips

Wash the kabu (Japanese turnips). Peel the skins and cut into 1-inch wedges.

2. Prepare the braising liquid

Prepare 2 cups of dashi stock (store-bought or homemade). In a pot, combine dashi stock with soy sauce, mirin, sake, sugar, and a 1-inch piece of ginger. Bring to a gentle simmer.

3. Braise the turnips

Add the turnip wedges to the simmering liquid. Reduce heat to a gentle simmer and cook until tender and translucent, about 25–30 minutes.

4. Finish the broth

Stir in bonito flakes and simmer for 3–5 minutes to infuse flavor.

5. Serve

Ladle turnips and broth into bowls. Garnish with sliced green onions and serve warm.
