    Glaze prep

    Whisk together soy sauce, mirin, honey, rice vinegar, minced garlic, sesame oil, and black pepper in a small bowl until the sugar dissolves and the mixture is fragrant.

    Prepare onion

    Peel the Maui onion. Cut into thick rings or wedges about 3/4 inch (2 cm) thick, keeping the root end intact to hold layers together.

    Preheat and oil

    Preheat a grill to medium heat (about 350-400°F / 175-205°C). Lightly brush the onion surfaces with neutral oil to prevent sticking.

    Grill onion

    Place the onion slices on the grill. Cook 4-5 minutes per side, rotating as needed to develop char and tenderness. Baste with the glaze during cooking.

    Finish glaze

    During the last minute of grilling, brush on any remaining glaze and allow it to caramelize into a shiny coating.
