    Prepare scallops

    Pat the Hokkaido scallops dry with paper towels. Season lightly with sea salt and black pepper on both sides.

    Preheat and oil

    Preheat a grill pan or grill to high heat. Brush the scallops lightly with extra-virgin olive oil to prevent sticking.

    Sear scallops

    Place scallops on the hot grill. Sear about 1.5–2 minutes per side until they develop a caramelized crust and are just opaque in the center.

    Rest and plate

    Remove from heat and let rest 1 minute. Arrange on plates and drizzle or spoon a small amount of Nori Sauce around the edge or over the top.

    Crumble the nori sheets into small pieces to help release flavor quickly.

    In a small saucepan, bring dashi stock to a gentle simmer. Add crumbled nori and simmer 2–3 minutes to infuse.

    Stir in soy sauce, mirin, and sugar. Simmer 1–2 minutes until the mixture slightly thickens and becomes glossy.
