Hayato Menu - Dipping Sauce

Method

Hayato Menu - Preparation

  1. 1

    Prep Baby Corn

Rinse baby corn if using fresh; pat dry thoroughly. Trim any woody ends as needed.

  2. 2

    Make Dipping Sauce (optional)

In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, minced garlic, and red chili flakes. Set aside to let flavors meld.

Hayato Menu - Batter and Coating

  1. 3

    Whisk Dry Batter

In a large bowl, whisk together flour, cornstarch, baking powder, salt, pepper, garlic powder, and chili powder until evenly distributed.

  2. 4

    Whisk Wet Batter

In a separate bowl, beat egg with ice-cold water until just combined.

  3. 5

    Combine and Adjust Batter

Pour the wet mixture into the dry ingredients and whisk until a thick, lump-free batter forms. If too thick, add a splash more water.

  4. 6

    Coat Baby Corn

Dip each baby corn piece into the batter, allowing excess to drip off for an even coating.

Hayato Menu - Frying

  1. 7

    Heat Oil

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

  2. 8

    Fry

Carefully fry coated baby corn in batches for 2–3 minutes until crisp and golden. Do not overcrowd the pan; maintain oil temperature.

  3. 9

    Drain and Season

Lift fried corn with a slotted spoon, drain on paper towels, and season lightly with salt while still hot.

Hayato Menu - Serving

  1. 10

    Serve

Arrange on a platter with dipping sauce on the side. Garnish with sesame seeds or chopped scallions if desired.
