Hayato Menu

  1. 1

    Prepare figs

Gently rinse the figs under cold water. Pat dry with a clean towel. Trim the stems and cut each fig into quarters while keeping the fruit connected at the stem end so the arrangement looks appealing when plated.

  2. 2

    Toast and grind sesame

In a small dry skillet over medium heat, toast the sesame seeds until they turn golden and release a nutty aroma, about 3-4 minutes. Transfer to a mortar and pestle (or small processor) and grind to a smooth-ish paste.

  3. 3

    Make goma dressing

In a small bowl, whisk the sesame paste with the soy sauce, mirin, and granulated sugar. Add water a little at a time to reach a smooth, pourable dressing.

  4. 4

    Coat figs with dressing

Gently toss the prepared fig quarters with enough dressing to lightly coat all surfaces. You want a delicate sheen, not a pool of sauce.

  5. 5

    Plate and garnish

Arrange the dressed figs on serving plates. Sprinkle with the remaining toasted sesame seeds and garnish with fresh shiso leaves if using. Serve immediately for best texture and aroma.

  6. 6

    Optional chill and serve

If desired, chill briefly (5-10 minutes) to let flavors meld, then serve.
