Cheese Making Process

    Prepare the Milk

    In a large pot, combine the whole milk and heavy cream. Heat gently to 85°F (29°C), stirring occasionally.

    Add Cultures

    Once the milk mixture is at the correct temperature, sprinkle the mesophilic starter culture and blue cheese cultures over the surface. Let it rehydrate for 2-3 minutes, then stir gently.

    Add Rennet

    Dilute the rennet in a small amount of cool, non-chlorinated water. Pour it into the milk mixture and stir gently for about 30 seconds. Stop stirring and allow the mixture to sit undisturbed for 60-90 minutes until a gel-like curd forms.

    Cut the Curd

    Once the curd has set, cut it into 1-inch cubes using a long knife. Allow it to rest for 5-10 minutes.

    Cook the Curd

    Gently heat the curds to 105°F (40°C) over 30 minutes, stirring occasionally to ensure even cooking.

    Drain the Curd

    Once the curds are cooked, pour them into a colander lined with cheesecloth. Gather the corners of the cloth and hang to drain for several hours.

    Mold and Salt

    Transfer the drained curds into a cheese mold, pressing gently. Sprinkle salt over the top and allow to sit for 12-24 hours at room temperature.

    Aging Process

    Remove the cheese from the mold, and pierce it with a skewer to allow airflow. Place it on a cheese mat in a cool, humid place to age for 2-3 months.
