    Milk Preparation

    In a large pot, heat the cow's milk to 32°C (90°F). Stir gently to avoid scorching.

    Adding Cultures

    Once the milk reaches 32°C, add the mesophilic starter culture. Stir gently and let it sit for 30 minutes to ripen.

    Coagulation

    Dissolve the rennet in a small amount of cool, non-chlorinated water. Add this to the milk and stir gently for about 30 seconds. Allow it to sit undisturbed for 60 minutes until it sets.

    Cutting the Curd

    Once the curd is set, cut it into 1-inch cubes using a long knife. Let it rest for 5-10 minutes.

    Cooking the Curd

    Gently heat the curds to 38°C (100°F) over the next 30 minutes, stirring occasionally to prevent the curds from clumping.

    Draining the Whey

    Once the curds have reached the desired temperature, pour the curds and whey into a colander lined with cheesecloth. Allow the whey to drain for 5-10 minutes.

    Salting

    Transfer the curds to a bowl and sprinkle with salt. Mix gently and pack into a cheese mold.

    Pressing

    Press the cheese with weights for about 6 hours, flipping it halfway through.

    Waxing

    After pressing, remove the cheese from the mold, dry it, and coat it with cheese wax to prevent moisture loss.

    Store the cheese in a cool, humid place for 3-6 months to develop flavor.
