Cheese Making Process

    Prepare the Milk

    Heat the raw sheep's milk in a large pot over low heat until it reaches about 37°C (98°F).

    Add Cultures

    Once the milk is at the right temperature, sprinkle the Pecorino cheese cultures over the surface and allow them to rehydrate for 5 minutes. Stir gently to incorporate.

    Add Rennet

    Dissolve the rennet in a small amount of cool water and add it to the milk. Stir gently for about 30 seconds, then stop stirring and let the mixture sit undisturbed for 30-60 minutes, or until it has set and forms a gel-like consistency.

    Cut the Curd

    Once the curd has set, use a knife to cut it into small cubes (about 1 cm). Allow it to rest for 5-10 minutes.

    Cook the Curd

    Slowly heat the curds to about 42°C (108°F), stirring gently to prevent them from sticking together. This should take about 20 minutes.

    Drain the Curd

    Once the curds are cooked, pour them into a cheesecloth-lined colander to drain off the whey. Gather the cheesecloth and allow the curds to hang for about 30 minutes.

    Salt the Cheese

    Transfer the curds to a bowl and sprinkle with salt. Mix gently to distribute the salt evenly.

    Mold the Cheese

    Pack the salted curds into cheese molds and press them to remove any remaining whey. Allow the cheese to sit in the molds for 24 hours.

    Aging

    Remove the cheese from the molds and let it age in a cool, humid environment for at least 4 months. Turn the cheese regularly to ensure even aging.
