Cut the Curd
Using a long knife, cut the curd into small cubes (about 1 cm). Allow it to rest for 5 minutes.

Cook the Curd
Gently heat the curds, stirring occasionally, for about 30 minutes, gradually increasing the temperature to 38°C (100°F).

Drain the Curd
Once cooked, pour the curds into a cheesecloth-lined colander. Allow the whey to drain for about 1 hour.

Add Salt and Paprika
Transfer the curds back into a mixing bowl, add the sea salt and smoked paprika, and mix thoroughly.

Mold the Cheese
Pack the curds into a cheese mold, pressing down firmly to eliminate any air pockets. Cover and let it sit at room temperature for 24 hours.

Aging the Cheese
After 24 hours, remove the cheese from the mold and place it in a cool, dry place to age for at least 3 months, turning it regularly.
