    Prepare the Milk

    In a large pot, heat the goat's milk and cream mixture over low heat until it reaches 85°F (29°C).

    Add Culture and Rennet

    Sprinkle the mesophilic starter culture over the surface of the milk and let it rehydrate for 5 minutes. Stir gently to incorporate, then add the liquid rennet and stir for another 30 seconds.

    Curd Formation

    Cover the pot and let it sit undisturbed for 1-2 hours until the curds form and have a clean break.

    Cutting the Curds

    Using a long knife, cut the curds into 1-inch cubes. Let them rest for 5-10 minutes.

    Cooking the Curds

    Gently heat the curds to 105°F (40°C) while stirring occasionally. Once at temperature, hold for 30 minutes.

    Draining the Curds

    Pour the curds into a cheesecloth-lined colander to drain whey. Gather the corners of the cheesecloth and form a pouch, then hang to drain for 4-6 hours.

    Salting and Shaping

    Once drained, transfer the curds to a mixing bowl. Add salt and charcoal powder, mixing thoroughly. Pack into a cheese mold and press for 12-24 hours.

    Aging

    Remove from the mold, wrap in cheese paper, and age in a cool, humid environment for at least 2 weeks, flipping every few days.

    Once aged, the cheese can be sliced and served. Add herbs if desired for additional flavor.
