    Prepare the Meat

    Begin by deboning the pork leg and cutting it into large chunks. Trim away excess fat and sinew.

    Create the Cure

    In a bowl, mix the sea salt, black peppercorns, and curing salt. Rub this mixture thoroughly over the pork pieces.

    Marinate the Pork

    Place the seasoned pork in a non-reactive container, cover, and refrigerate for at least 3 weeks. Turn the meat every few days to ensure even curing.

    Stuff the Casings

    After 3 weeks, rinse the pork under cold water and pat dry. Grind the garlic and thyme into a paste, then mix with the pork and red wine. Stuff the mixture into the natural hog casings tightly.

    Tie and Hang

    Tie off the ends of the casings with kitchen twine and prick the sausages to remove air bubbles. Hang in a cool, humid place (around 12-15°C) for 3 to 6 months to dry and cure.
