    Remove the New York strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Rub both sides of the steaks with olive oil, then generously season with salt and black pepper.

    In a heavy skillet or cast iron pan, heat over high heat until very hot, about 5-7 minutes.
