    Clean and boil potatoes

    Place the potatoes in a large pot and cover with cold water by about 1 inch. Add 1 tablespoon kosher salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 12–18 minutes depending on size. Test with a fork: potatoes should be soft but not falling apart. Drain well in a colander and let steam-dry for 2–3 minutes.

    Preheat oven

    While potatoes cook, preheat the oven to 450°F (230°C). Position a rimmed baking sheet in the oven to heat while you prepare the potatoes (optional but helps crisping).

    Smash and season

    Transfer the drained potatoes to the hot baking sheet (or to a nearby work surface and then to the sheet). Using the bottom of a heavy glass, a potato masher, or a small plate, press each potato down until it's about 1/2-inch thick — keep pieces intact. Drizzle or brush the smashed potatoes evenly with the 2 tablespoons olive oil and the melted butter. Sprinkle the garlic powder, smoked paprika, and freshly ground black pepper evenly over the potatoes.

    Roast until crispy

    Place the baking sheet with the seasoned smashed potatoes in the preheated oven. Roast for 18–25 minutes, flipping once halfway through, until edges are deeply golden and crisp and the undersides are browned.

    Add final touches

    Remove the potatoes from the oven and immediately sprinkle with grated Parmesan (if using) and a pinch of coarse sea salt to taste. Scatter the chopped parsley over the potatoes.

    Transfer to a serving platter and serve hot as a side. Recommend serving within 10 minutes for best texture.
