If using fresh corn: shuck the ears, remove silks, then slice the kernels off the cobs using a sharp knife. Reserve cobs for making a quick corn broth (optional) by simmering them in 2 cups water for 20 minutes. If using frozen: thaw and drain excess water. Finely dice the onion and both bell peppers. Mince the garlic. Separate scallion whites and greens and slice thinly.
Cook base vegetables

Heat a large heavy skillet or cast-iron pan over medium heat. Add the vegetable oil and 1 tablespoon of butter. When shimmering, add the diced bacon (if using) and cook until crisp, then remove with a slotted spoon and set aside, leaving rendered fat in the pan.

Cook the corn

Increase heat to medium-high and add the corn kernels to the pan. Stir to combine with the softened aromatics and spread the mixture into an even layer. Allow the corn to cook undisturbed for 2–3 minutes so some kernels take on light caramelized color, then stir and let another 1–2 minutes to develop more color. This adds depth of flavor.

Stir in the heavy cream (if using) for extra richness and cook 1 minute to warm through.

Season the maque choux with kosher salt, black pepper, granulated sugar (if using), cayenne or a dash of hot sauce (if using), and the lemon juice or vinegar. Taste and adjust seasoning—corn should taste bright and slightly sweet with a pleasant note of acid.

Fold in the cooked bacon (if using), the sliced green parts of the scallions, and chopped parsley. If you want a hint of smoke, sprinkle in the smoked paprika and stir to combine.
