    Sweat aromatics

    In a medium heavy-bottomed pot over medium heat, melt the butter. Add the minced shallot and diced celery and cook, stirring occasionally, until translucent and softened but not browned, about 4–6 minutes.

    Make roux

    Sprinkle the flour over the softened shallot and celery and stir constantly for 1–2 minutes to cook the raw flour and form a blond roux. Do not let it brown.

    Add liquids

    Slowly whisk in the chicken stock until smooth, then add the milk and bring the mixture to a gentle simmer. Cook, stirring occasionally, until the broth begins to thicken slightly, about 6–8 minutes.

    Season and simmer

    Stir in the heavy cream, dry sherry, Old Bay, salt, and black pepper. Reduce heat to low and simmer gently for 8–10 minutes to let flavors meld. Taste and adjust seasoning as needed.

Crab & Finish

    Temper egg yolk

    Place the beaten egg yolk in a small bowl. Ladle about 1/4 cup of the hot (but not boiling) broth into the yolk while whisking constantly to temper it so it won't scramble.

    Combine yolk and roe

    If using crab roe, whisk the roe into the tempered yolk. Slowly pour that mixture back into the pot while stirring. This adds richness and the characteristic color of She Crab soup.

    Add crab meat

    Gently fold in the lump crab meat and warm through over low heat for 2–3 minutes. Avoid boiling once crab is added to keep the meat tender and intact.

    Finish and balance

    Stir in the lemon juice, hot sauce (if using), and most of the sliced chives (reserve a little for garnish). Taste and adjust salt, pepper, or sherry as desired.

    Ladle the soup into warmed bowls. Sprinkle reserved chives and chopped parsley over each bowl. Top with toasted croutons if using. Serve immediately.

    Preheat the oven to 375°F (190°C). Toss the cubed bread with olive oil and salt on a baking sheet. Spread in a single layer and bake for 8–10 minutes, tossing once, until golden and crisp. Cool slightly before scattering on soup.
