    Prepare vegetables

    Rinse and dry the mixed salad greens thoroughly (use a salad spinner if available). Halve the cherry tomatoes, slice the cucumber into quarter-moons, thinly slice the red onion, and shred the carrot. Combine all prepared vegetables in a large salad bowl.

Add-ins

    Cook bacon

    Place bacon slices in a cold skillet and cook over medium heat until crisp, turning occasionally (about 8–10 minutes). Transfer cooked bacon to a paper towel-lined plate to drain and cool, then crumble into small pieces.

    Add cheese and bacon

    When the bacon is cooled and crumbled, sprinkle the bacon crumbles and the crumbled bleu cheese evenly over the prepared greens and vegetables.

Dressing

    Make dressing

    In a small bowl or jar, combine the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper. Whisk vigorously (or shake in a closed jar) until the dressing is emulsified and slightly thickened.

    Dress the salad

    Just before serving, pour the dressing over the salad—start with about three quarters of the dressing and toss gently to coat the greens and distribute the add-ins. Taste and add more dressing if desired. Serve immediately so the greens remain crisp.
