Method

Tea Base

    Bring water to a boil

    Pour 8 cups of water into a kettle or large pot and bring to a rolling boil over high heat.

    Bloom tea (optional for loose leaf)

    If using loose leaf tea, pour 1 cup of the boiling water over the tea leaves in a heatproof teapot or heatproof pitcher and steep for 30 seconds to 1 minute to open the leaves. This step is optional but deepens flavor.

    Steep tea

    Add the remaining boiling water to the teapot or pitcher (or simply pour all 8 cups over 8 tea bags in a heatproof pitcher). Cover and steep for 5 minutes for a balanced black tea; steep 6–8 minutes for stronger flavor. Avoid steeping longer than 8 minutes to prevent excessive bitterness.

    Remove tea leaves or bags

    After steeping, strain out the loose leaves with a fine-mesh strainer or remove and discard the tea bags. Press gently on tea bags with a spoon if desired to extract a little extra, but avoid squeezing too hard to limit bitterness.

    Make simple syrup (if using sugar)

    In a small heatproof bowl or measuring cup, combine 1 cup granulated sugar with 1/4 cup hot water. Stir until the sugar is completely dissolved to make a simple syrup. Let cool slightly.

    Sweeten the tea

    While the tea is still warm (but not scalding), stir in the simple syrup to taste. For the recipe proportions given, add all for medium-sweet iced tea; reduce quantity if you prefer less sweetness.

Citrus & Aromatics (Optional)

    Add lemon juice

    Stir in 1/2 cup fresh lemon juice to the warm tea if making lemon iced tea. Taste and adjust: add up to 3/4 cup for a more pronounced citrus note.

    Chill the tea

    Allow the sweetened and/or flavored tea to cool at room temperature for 20–30 minutes, then transfer to the refrigerator and chill until cold, about 1–2 hours.

    Prepare garnishes

    While the tea chills, rinse lemon slices and mint sprigs. Lightly bruise mint by gently clapping the sprigs between your palms to release aroma.

Ice & Serving

    Assemble drinks

    Fill a large pitcher or individual glasses with ice (about 4 cups total). Pour the chilled tea over the ice, leaving a small amount of space at the top. If the tea chilled and concentrated, add up to 1/2 cup additional cold water to taste.

    Garnish and serve

    Add lemon slices and mint sprigs to the pitcher or individual glasses. Serve immediately with extra lemon wedges on the side.

    Store any leftover tea in a covered pitcher in the refrigerator for up to 3–4 days. Keep ice separate until serving to avoid dilution.
