Cookie Dough

Method

    Position a rack in the center of the oven and preheat to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

    In a medium bowl, whisk together the all-purpose flour, baking soda, and fine salt until evenly distributed. Set aside.

    In a large mixing bowl (or the bowl of a stand mixer fitted with the paddle), combine the softened unsalted butter, granulated sugar, and packed light brown sugar. Beat on medium speed for 2 to 3 minutes until the mixture is pale, fluffy, and well combined. Scrape down the bowl as needed.

    Add the eggs one at a time, mixing on low-to-medium speed after each addition until fully incorporated. Add the pure vanilla extract and mix until combined. Scrape the bowl.

    With the mixer on low speed, add the flour mixture in two additions, mixing just until no dry streaks remain. Do not overmix — stop as soon as the dough is uniform.

    Using a rubber spatula, fold in the semisweet chocolate chips until evenly distributed. If using, fold in the chopped toasted walnuts or pecans.

    For thicker, chewier cookies and better flavor development, cover the dough and chill in the refrigerator for 30 minutes to 2 hours. If short on time, you can bake immediately; cookies will spread more.

Shaping & Baking

    Portion the dough

    Using a 1.5 tablespoon cookie scoop (about 1 to 1.25 inches diameter) or a spoon, portion rounded mounds of dough about 1 to 1.25 tablespoons each and place them 2 inches apart on the prepared baking sheets. Leave room for spreading. For larger cookies use a 2-tablespoon scoop and increase baking time slightly.

    Optional pressing

    If desired, gently press a few extra chocolate chips onto the top of each dough mound for a bakery-style appearance.

    Bake

    Bake one sheet at a time in the preheated 350°F (175°C) oven for 10 to 12 minutes, rotating the sheet halfway through baking. Cookies are done when the edges are golden-brown but centers still look slightly soft. Baking time will vary with cookie size and oven; adjust as needed.

    Finish with sea salt

    Within about 1 minute of removing the cookies from the oven, sprinkle a small pinch of coarse sea salt on each cookie to enhance flavor.

    Allow the cookies to cool on the baking sheet for 5 minutes to set, then transfer them to a wire rack to cool completely. Repeat with remaining dough, allowing baking sheets to cool between batches to reduce spreading.
