Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure the fries get crispy.

Prepare Sweet Potatoes

Wash and peel the sweet potatoes. Cut them into even sticks, about 1/4 to 1/2 inch thick, to ensure they cook uniformly.

Coat Sweet Potatoes

In a large bowl, toss the sweet potato sticks with olive oil, paprika, garlic powder, salt, black pepper, and cornstarch until they are well-coated.

Arrange on Baking Sheet

Spread the coated sweet potato fries in a single layer on a baking sheet lined with parchment paper. Make sure they are not crowded to allow for even cooking.

Bake

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the fries are golden and crispy.

Serve

Remove from the oven and let cool for a few minutes. Serve warm with kryptonite aïoli.
