Prepare the Beef Patty
In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently to avoid overworking the meat, then form it into two equal patties, about 3/4 inch thick.

Cook the Burger Patties
Heat the vegetable oil in a skillet over medium-high heat. Once hot, add the beef patties and cook for about 3-4 minutes on one side. Flip the patties, and place a slice of cheddar cheese on top of each patty. Cook for another 3-4 minutes until the cheese melts and the patties are cooked to your desired doneness.

Prepare the Buns
While the patties are cooking, slice the burger buns in half and toast them lightly in a separate skillet or in a toaster until golden brown.

Assemble the Burger
Spread Dijon mustard on the bottom half of each bun. Place the cooked patty with melted cheese on top of the mustard. Layer the pastrami slices over the cheese, followed by the pickle slices and optional sliced onions. Finally, cover with the top half of the bun.

Serve
Serve the pastrami burgers immediately while hot, with your favorite sides.
