Prepare the Halibut
Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

Sear the Halibut
In a large skillet, heat olive oil over medium-high heat. Once hot, add the halibut fillets and sear for about 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

Make the Curry Sauce
In the same skillet, lower the heat to medium. Add the yellow curry paste and cook for about 1 minute until fragrant.

Add Coconut Milk
Pour in the coconut milk and stir well to combine with the curry paste. Bring the mixture to a simmer.

Season the Sauce
Add fish sauce and lime juice to the coconut curry mixture. Stir well and let it simmer for an additional 2-3 minutes.

Finish with Halibut
Return the halibut fillets to the skillet, spoon the sauce over them, and let simmer for another 2-3 minutes until the fish is cooked through.

Serve
Serve the halibut on a bed of cooked jasmine rice, garnished with fresh cilantro and additional lime wedges if desired.
