Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

Prepare the Breading
In another bowl, mix the all-purpose flour, cornstarch, cayenne pepper, paprika, garlic powder, salt, and black pepper. This will be your breading mixture.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, making sure to coat them thoroughly. Shake off any excess flour.

Fry the Chicken
Carefully place the breaded chicken pieces in the hot oil. Fry for about 8-10 minutes on each side, or until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Drain the Chicken
Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil.

Assemble the Sandwich
On the bottom half of each brioche bun, place a piece of fried chicken. Top with pickles, shredded lettuce, and sliced tomatoes. Finally, place the top half of the bun on each sandwich.
