Prepare the Patties
In a bowl, season the ground beef with salt and black pepper. Divide the beef into two equal portions and shape them into burger patties.

Cook the Patties
Heat a grill or frying pan over medium-high heat. Cook the patties for about 3-4 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place two slices of Cooper cheese on each patty to melt.

Assemble the Burger
On the bottom half of each brioche bun, spread Dijon mustard and ketchup. Place one patty on each bun, then top with minced onions and pickles. Add the second patty on top and finish with the top half of the bun.

Serve the burgers hot with your favorite side dishes.
